1. Prepare the Smoker: Preheat your smoker to 225°F (107°C) using your favorite wood chips, such as hickory or mesquite.
2. Wash the Potatoes: Rinse the russet potatoes under cold water to remove any dirt and debris. Dry them thoroughly.
3. Prick the Potatoes: Use a fork to prick several holes in each potato. This allows steam to escape while cooking.
4. Coat with Oil: In a large bowl, coat the potatoes with olive oil, ensuring they are evenly covered.
